Deb’s Mexican Sautee
-In a large fry pan with olive oil sautee …
1 large green pepper chopped
1 large onion chopped and
1 large or 2 small cloves of garlic diced
-sautee till soft. meanwhile cube 2 good sized chicken cutlets  and 6 ounces chorizo.
-Add chicken and chorizo to fryer. More oil if necessary to prevent sticking.
-Add.
1 teaspoon cumin
1 teaspoon chili podwer
1 teaspoon cajun seasoning
1 Tablespoon fresh (or 1 teaspoon dried) cilantro
1 Tablespoon your favorite hot sauce.
-Brown chicken. Turning as needed. Once browned add…
1/3 cup salsa to deglaze the pan. Stir till warmed. Top with
1/2 c shredded monterey jack cheese. Let melt.
-sprinkle 1/2 c diced avacado on top. serve.
Serve with cornbread (my preference has jalepenoes in them) or rice and black beans.
